I can't offer you any Debian specific help, but man qmail-control(5) describes where to find the documentation for each qmail control file. The necessary ones are probably limited to defaultdomain, locals, me and plusdomain. You also may need rcpthosts to prevent an open relay if this box is on the Internet directly.
